Mantiqueira de Minas, where the Serra das Tres Bajas farm is located, is an area blessed with nature and water resources, so much so that it is internationally recognized as a reservoir for high-quality mineral water. Although it has been broadly referred to as Carmo de Minas coffee, it is now designated as a separate production area by the BSCA (Brazilian Specialty Coffee Association) in the division of production areas as coffee from Mantiqueira de Minas.
Located in a mountainous region, Mantiqueira de Minas has always been handicapped by the inability to introduce large machinery like in Brazil's main producing regions, and the inability to reduce production costs. However, the entire region has made a concerted effort to thoroughly improve quality, and has become one of the first regions in the country to produce high-quality, high-added-value specialty coffee.
Currently, the region has been working on sorting during production processing using green separators, which are the basis for specialty coffee production, and drying in suspended patios since early on, and is now known as a leading specialty coffee producing region in Brazil thanks to its accumulated know-how. One of the factors that has made it possible for the region to work on high-quality coffee production is the existence of the producers' association Cocarive, to which the region belongs.
