The coffee expressed by roasters varies greatly, from extremely light roasts that emphasize acidity, such as those represented by Nordic roasts, to light roasts that emphasize sweetness, which could be considered a current trend.
At THE WORD COFFEE, we aim for a very narrow roasting range, between extremely light and medium-light.
Sweetness felt in the fragrance and aroma, delicate and gentle acidity, bright, vibrant, and juicy, with complex, layered flavors. This is the coffee we express.
Roasting Philosophy.
Coffee's expression and flavor change depending on the roast. THE WORD COFFEE's ideal roast is very simple.
To bring out the inherent goodness of the ingredient to its utmost limit.
Japan's approach to food, with its long history, culture, and traditions, is also applied to roasting high-quality coffee beans. We aim to eliminate smoke odors and any unnecessary or extraneous elements derived from roasting as much as possible, pursuing a roast that brings out all the flavors of coffee carefully cultivated by producers.
A refined, simple, and beautifully curved roast profile.
We believe that by building upon the culture, techniques, and identity cultivated by Japanese coffee culture, and by reflecting, updating, and refining these in the roasting of high-quality specialty coffee, it is possible to create even better coffee.
We use a semi-hot-air roaster, maximizing its characteristics and intentionally controlling multiple heat transfer methods at each phase to achieve appropriate roasting for each bean. As a result, the roast profile inevitably forms a beautiful curve, expressing the complex coffee unique to semi-hot-air roasting.
At THE WORD COFFEE ROASTERS, based on the above philosophy, we approach roasting in various ways, meticulously collect data, and continuously verify and update our methods.
・About Roast Level Indication
You can check this on the product description page or in the option selection field. At THE WORD COFFEE, we express roast levels in five stages using numbers. Roast level 1 is light roast (acidity dominant), 3 is medium roast (sweetness, acidity, balance), and 5 is dark roast (bitterness dominant). As the number increases, the roast becomes darker, transitioning from fruity acidic coffee to familiar bitter coffee. We believe that light to medium roasts best express the unique characteristics of specialty coffee. While THE WORD COFFEE offers coffee of all roast levels, we recommend light to medium roasts.
・About Aging
It is often said that coffee is best enjoyed from the second day after roasting. However, unlike commodity-grade coffee, specialty-grade coffee allows for changes in flavor and aroma by undergoing a certain period of aging. This period varies depending on the brand and roast level. At THE WORD COFFEE, we set the best-by date with this in mind. Please find your preferred aging period within the given shelf life.

We only ship fresh coffee beans: within 14 days of roasting for light to medium roasts, and within 7 days for medium-dark roasts and darker. (Roast date is indicated on the package)
・About Best-Before Date
For whole beans, from the roast date (indicated on the package): within 60 days for light to medium roasts, and within 45 days for medium-dark to dark roasts. You can still enjoy it after this period, but the aroma and flavor will diminish and gradually be replaced by negative components, so if you cannot consume it within the above period, we recommend freezing it. If you purchase ground coffee, regardless of the roast level, please freeze it if you cannot consume it within approximately one week of opening.
