Japan has a long history, culture, and tradition, and its approach to food is also reflected in the roasting of high-quality coffee. We pursue a roast that eliminates as much smoky odor and unnecessary elements and waste from roasting as possible, refines the coffee, and brings out all of the flavors of the ingredients that are carefully crafted by the producers.

We believe that by taking into account the culture, technology, and identity that Japan's coffee culture has woven, and reflecting it in the roasting of new, high-quality specialty coffee, and updating and refining it, we can produce even more delicious coffee.
We use a semi-hot air roaster to maximize its characteristics, controlling the transfer of heat in multiple phases as intended, and roasting each bean appropriately. As a result, the roast curve inevitably draws a beautiful curve.
THE WORD COFFEE's coffee is focused on flavor, aroma, and fragrance.
Different roasters express different types of coffee, such as a very light roast that emphasizes acidity, as typified by Nordic roast, or a light roast that emphasizes sweetness, which is a current trend.
At THE WORD COFFEE, we are conscious of roasting in a very narrow range between very light roast and medium light roast. The sweetness felt in the fragrance and aroma, the delicate, complex and gentle acidity, the gorgeous, vivid, fresh and complex flavors layered on top of each other. That is the coffee we express.
Based on the above ideas, THE WORD COFFEE ROASTERS attempts to approach roasting in various ways, collecting detailed data, verifying and updating it daily.
・About roast degree indication
You can check the brand description page or the option selection section. THE WORD COFFEE expresses the roast level in five levels, using numbers. Roast level 1 is light roast (mainly acidity), 3 is medium roast (sweetness, acidity, balance), and 5 is dark roast (mainly bitterness). As the number increases, the roast becomes deeper, from a fruity acidity to a familiar bitterness. We believe that the roast level that best expresses the individuality of specialty coffee is light to medium roast. THE WORD COFFEE offers coffee of all roast levels, but we recommend light to medium roast.
・About aging
It is often said that coffee is best enjoyed two days after roasting, but unlike commodity coffee, specialty coffee is aged for a set period of time, allowing you to enjoy changes in its aroma and flavor. This period varies depending on the brand and roasting level. At THE WORD COFFEE, we take this into consideration when setting our expiration dates. Try to find the aging period that best suits you within the deadline.
We only ship fresh coffee within 10 days of roasting for light to medium roast beans, and within 7 days for medium-dark roast beans. (The roasting date is indicated on the package.)
・About expiration date
In bean form, from the roasting date (listed on the package), light to medium roasts should be consumed within 60 days, and medium-dark to dark roasts within 45 days. Even after this period, the coffee is still delicious and can be enjoyed, but as negative substances will gradually be replaced by negative substances, we recommend freezing it if you cannot consume it within the above period.
