Yirgacheffe is known as the region that produces the highest quality beans in Ethiopia. The Kochale area in particular has abundant water resources and has many washing stations, which is why it produces high-quality Yirgacheffe coffee. It is famous as one of the regions. This natural coffee is delivered from the Aricha Washing Station, which produces the best coffee in Yirgacheffe. It is a top-level washing station in terms of cherry ripeness, cherry sorting and selection techniques. .
We use natural, fully ripe cherries that are usually used for high-quality washed coffee. This region is located at a high altitude and directly on the equator, so if the sunlight is too strong, the taste becomes cloudy. Therefore, during the hours of 11:00 to 15:00 when the sunlight is strongest, the cherries are covered with sheets to prevent rapid drying. In addition, by slowly drying the cherries for 20 days, twice the usual drying time of 10 days, the moisture in the coffee is uniformly distributed, creating a complex yet clean taste. The slow drying process slows down the speed of deterioration, making it possible to maintain high-quality coffee all year round.
