Shantawene Washing Station
The Shantawene Washing Station, located in the highlands of Bensa, Shantawene in Sidamo province, has been a directly managed washing station operated by Tracon since 2022.
It is utilized by 990 small-scale farmers living in the surrounding area, boasting an annual production of approximately 6 containers. The manager, Mr. Seid, places great importance on maintaining quality through various trial-and-error efforts in the drying process, such as covering African beds with nets for shading and implementing slow drying in the shade.
The coffee cultivation area in Shantawene reaches an altitude of 2000-2250m, placing it among the highest regions for Sidamo coffee. As a result, the vibrant flavors characteristic of Sidamo coffee are intensely felt, and the complexity of its flavors is highly acclaimed. The high-quality Sidamo coffee, a gift from the unique microclimate of the region, is a source of pride for everyone involved with the Shantawene Washing Station.

Commitment to Quality
During harvest season, cherries are delivered daily by farmers. With a good relationship with the washing station, farmers bring ripe cherries directly by mule or motorcycle. The washing station values face-to-face relationships, not only making traceability easier to confirm but also allowing for feedback to each farmer regarding ripeness and cultivation methods. This also creates a positive cycle that improves the ripeness and uniformity of harvested cherries.
Delivered cherries undergo sorting, including the removal of floaters, and then pulping to remove the fruit flesh. Subsequently, they undergo a fermentation process of 48-72 hours in fermentation tanks and washing in channels before being transported to African beds. The washing station aims for an appropriate fermentation process adjusted to the thickness of the mucilage and the temperature.
The resulting wet parchment is brought to African beds for the drying process. One of Shantawene's characteristics is that its African beds are equipped with special shades. In Shantawene, located at high altitudes, the amount of sunlight is relatively high, and cool mountain breezes blow, which tends to shorten drying times. However, using shades allows for proper control of the drying process. Currently, depending on the weather and temperature, it takes about 10 days to finish the washed coffee. The sight of hand-picking parchment while using netted shades is a rare scene not often observed at other washing stations.
