Sudan Rume species
As its name suggests, Sudan Lume was discovered in the Lume Valley of Sudan. The Sudan Lume variety, discovered in the Lume Valley in the Poma Plateau in southeastern Sudan, Africa, is said to be the origin of Typica and Bourbon, the representative Arabica varieties. Although it is disease resistant and has a delicate and good cup quality, it has very low productivity and has not been recognized as a commercial product and was mainly used for research purposes. However, the delicate flavor unique to this variety has been rediscovered and re-recognized, and it has begun to be used in competitions and has attracted the attention of baristas and roasters around the world. However, it is still a rare variety today because the yield is still low.
CGLE carried out multiple soil tests before introducing the variety to its farms, with the best results seen at Las Margaritas farm, at an altitude of 1,700-1,800 metres.
CAFE GRANJA LA ESPERANZA "CGLE"
CAFE GRANJA LA ESPERANZA (CGLE) is a historic coffee shop that has been in business since 1945 and is said to have been the first to bring Geisha coffee to Colombia. The turning point came in 2007, when they rented La Carreida Farm in the Boque region of Panama, and one year later won first place at the Panama competition "Best of Panama". At the same time, they brought Geisha coffee back to Colombia, ushering in a new era for CGLE.
They are always on the cutting edge, developing rare varieties and special refining methods, as well as cultivating rare species. The top quality nano-lot coffee produced by CGLE continues to attract baristas around the world, and is used in competitions and other events. As a producer group that continues to produce the top of the top lots in Colombia, CGLE is highly regarded worldwide. CGLE consists of five farms: CERPO AZUL, LAS MARGARITAS, LA ESPERANZA, POTOSI, and HAWAII, and the one-of-a-kind coffee that they produce, bearing the CGLE name, is always traded at a high price.
HYBRID WASHED PROCESS
The coffee is carefully hand-selected, stirred using equipment suitable for the depulping process without water, sensory evaluation is performed, and the appropriate fermentation process is determined to achieve the ideal taste based on the cup profile. The coffee is fermented with the whole berry for 19 to 22 hours, after which the skins are removed and a secondary fermentation process with the skins and mucus begins, which lasts for 35 hours.
After the coffee is thoroughly washed, it is mechanically dried at a temperature that is closely monitored and ranges between 35°C (95°F) and 45°C (113°F). The final moisture content of the green beans is perfectly controlled at around 10.5% before they are shipped.
