About Chiapas
Chiapas is one of Mexico's 31 states, located in the southeastern part of the country, bordering Guatemala to the east, and surrounded by Veracruz, Oaxaca, and Tabasco states to the north, and the Pacific Ocean to the west.
There are at least 400,000 farmers, 90% of whom are small-scale farmers who plant coffee on less than 12 acres, and about 30% of these are operated by women. This decaf coffee is made with luxurious, fresh green coffee beans harvested at high altitudes, which boast the highest quality in Mexico and can withstand the decaffeination process.
Chiapas is blessed with abundant water resources. It is said that 30% of Mexico's fresh water resources originate from Chiapas. The decaffeination process uses only the clean glacial water stored on Mexico's highest mountain, Pico de Orizaba (5,636m), which supplies most of these water resources, and is carried out without the use of any chemicals.

Descamex, the company that performs the decaffeination process, has a decaffeination plant in Veracruz, a state with a famous port for exporting Mexican coffee. They ensure the freshness of the coffee through proper management and prompt export procedures.
Process
・Green beans are loaded into the coffee bean hopper (5 tons per batch).
・As a pre-caffeine extraction step, the beans undergo approximately one hour of water absorption, expansion, and treatment.
This softens the cell walls of the beans, making it easier to extract components.
・Caffeine is extracted through processes such as pressurization, appropriate temperature control, and depressurization. (First quality check)
・The decaffeinated beans are primary dried (4 hours).
・Loaded into a vibrating horizontal dryer and secondary dried with hot air heated to below 60 degrees Celsius until the appropriate moisture content is reached (4 hours).
・Loaded into a vertical dryer and tertiary dried with hot air below 60 degrees Celsius until the appropriate moisture content is reached (4 hours). (Second quality check)
・Foreign matter removal and polishing to remove foreign matter.
・After being transferred to the final product tank and undergoing a third quality check, they are packed and shipped.
-Due to the impact of the decaffeination process on green beans, oil may appear on the surface immediately after roasting. There is absolutely no problem with the quality, so please enjoy with confidence.
