COMPETITION LOT

2023 Costa Rica Cup of Excellence

115 lots were entered for the 2023 Costa Rica Cup of Excellence, 76 of which were selected by domestic judging, with the top 40 lots advancing to the international judging panel. The international judging panel took place in San Jose from May 27th to June 3rd, and the top 30 lots with a score of 87 points or more were awarded the honor of the Cup of Excellence. The auction took place late at night on July 6th and 7th, and was an intense auction that lasted for nine hours until the early hours of the morning.

Finca Fidels

Finca Fidels is a small family-run farm located at an altitude of 1,550m in San Luis de Grecia in the West Valley. It has been dedicated to coffee cultivation for over 50 years, and Luz Marina currently runs the farm while raising her nine children.
Fidel's Farm is a farm that her husband Fidel inherited from his father, poured his love and passion into, and inherited his father's know-how of coffee production. Unfortunately, Fidel passed away at the age of 67, and since then, Marina and her son Luis Antonio, the third generation owner, have been the ones to protect the farm.

The farm has been producing traditional varieties such as Catuura and Catuai for generations, and they have been committed to producing these varieties, which they have inherited the know-how from generation to generation, but in order to further improve the quality of their coffee, they have tried to grow the San Roque variety (Kenya variety), which is highly regarded mainly in the West Valley. Their first participation in the Cup of Excellence was also one of the challenges to pass on the farm to the next generation.

Micro lot production

On the other hand, since Fidels Farm does not yet have its own mill, this time they asked Don Joel Mill, a coffee producer from San Luis de Gracia and a close friend of theirs, Alan Oviedo Rodriguez, to help with the production process. This lot was produced using a washed process called the rested washed process. In this method, the outer skin and musilage are removed with a musilage remover, and then the wet parchment and the removed musilage are placed in an open tank and left to rest. After that, it is washed with water and dried on an African bed. They say that rather than promoting dry fermentation in a tank, they rest the beans in the wet parchment state along with the musilage. They also participated in the process and the final selection in the dry mill process.

And we won an award on our first try. It was a great joy to achieve this great feat, beating out well-known farms and winning an award on our first try, especially in Costa Rica, a pioneering producing country in the specialty coffee market.

*The above process is believed to involve the following three elements:
-Compared to the regular washed process, it does not use a fermentation tank filled with water, so the amount of water used throughout the process is less. -Because the mucilage of the wet parchment is removed, it is easier to time and control the drying process compared to the honey process. -By placing the mucilage and wet parchment in tanks and letting them sit, we aim to change the flavor from regular washed coffee.
