Kotowa Duncan Estate
Kotowa is a brand with an outstanding tradition and presence in Panama's coffee world. Owner Ricardo Koyner produces coffee cherries on four farms in the Boquete region. Since Alexander Duncan McIntyre was captivated by the distant land of Boquete and moved there in the early 20th century, four generations have upheld traditional coffee cultivation and production methods to produce the finest quality coffee. Kotowa's production and processing are always carried out with environmental considerations in mind. Only 0.5 liters of water are used per kilogram of processed dry coffee, significantly below the average of other countries. All by-products of the process are converted into compost, which is used as organic fertilizer on the Duncan farm.

To protect the beautiful nature and livelihoods of the people of Boquete, Kotowa has made a special effort to protect the environment, planting over 500 fruit trees in the surrounding area, limiting water usage, and preserving untouched forests. Kotowa currently owns multiple farms, and among its five main farms - Duncan (1650-1750m), Don K (1700-1750m), Rio Cristal (1700-1850m), Traditional (1300-1400m), and Las Brujas (1750-1850m) - coffee produced at the Duncan farm is organically certified in the US and Europe. Kotowa has consistently won awards at the Best of Panama since 2004, including 2nd place in Traditional in 2020, 4th place in Varietals in 2023, and reaching the finals in 2025, constantly producing top-quality coffee.

After harvesting at the farm, transferred to the processing facility and stored overnight in jute bags. -

Pulping process performed, followed by 1 day of fermentation in white jute bags. -

After washing, sun-dried on African beds outside the greenhouse.
Moved into the greenhouse in the afternoon and dried for 8 days in a medium-thick layer of about 10cm. -

Transferred to a static dryer set to 35°C and dried for 3 days. -
February 28, 2025
Drying completely finished.
