Cherchere Washing Station
The Cherchele Washing Station is owned by Tracon and is located at an altitude of 1,950m in Cherchele, Gedeo County, Southern Nations, Nationalities, and People's Region, in the Yirgachefe coffee-producing region, and is owned by Tracon. The station works closely with the approximately 1,000 local coffee farmers to produce high-quality coffee.
During the harvest season, freshly harvested cherries are brought in from farmers every day, and are processed and dried at the washing station, where they are turned into dry parchment. More than 200 people work at the Cherchere Washing Station during the harvest season, selecting the cherries to be delivered, working and managing each stage of the processing, stirring and picking on the African beds, and many other efforts are used to improve the quality of the coffee. Thus, the amount of coffee produced in Cherchere reaches approximately 5,000 bags per year.
In recent years, in pursuit of more diverse flavors and quality, in addition to the two traditional production processes of washed and natural, we are also exploring flavor changes through the fermentation process such as anaerobic and carbonic maceration. Even in the washed process, we improve the quality of coffee by using higher quality and cleaner water by filtering the water and strengthening the hygiene of the waterway.
In the drying process, in addition to managing lots by bed number and drying in the sun on traditional African beds, we have also tested and adopted shade drying using agricultural shading nets as shades. Drying on a normal African bed takes about 10 to 14 days, but drying in the shade extends the drying time by about a week, making it a slow drying of about 20 days. This change in drying time leads to the optimization of not only the moisture value but also the water activity value, greatly contributing to the stabilization of quality over the long term.
Yirgacheffe Coffee
Yirgachefe coffee, classified as a coffee producing region, is composed of coffee from the Gedeo Zone of the Southern Nations, Nationalities, and People's Region and the neighboring Gerena Abaya Woreda (district/town) of the Oromia Region to the west. The Gedeo Zone is centered around Dilla, with the towns of Wenago, Yirgachefe, Kochere, and Gedeb being the main production areas. The altitude is said to be 1,700 to 2,440 meters.
Over 80% of the people living in this area are Gedeo people, with the Oromo and Amhara people also living here. The washing station is said to have been introduced to the Yirgacheffe area in the 1970s and has a long history, and is widely known as the source of Ethiopia's representative washed coffee. As a mountainous region, it has abundant water resources, which support the quality of the coffee here. Many of the small-scale coffee producers who live in this area plant ensete, their staple food, along with shade trees such as acacia and African cordia. (Also known as false bananas, this plant resembles a banana tree but does not bear fruit and is cultivated for its edible starch.)
