Coffee, as expressed by THE WORD COFFEE, focuses on flavor, aroma, and fragrance.
The coffee expressed by each roaster varies, from very light roasts that emphasize acidity, as exemplified by Nordic roasts, to light roasts that emphasize sweetness, which is a current trend.
At THE WORD COFFEE, we aim for a very narrow range of roasting, from very light to medium-light.
Sweetness felt in the fragrance and aroma, delicate and gentle acidity, bright, vivid, juicy, and complex flavors layering upon layers. This is the coffee we express.
Roasting Philosophy.
Coffee's character and flavor change depending on the roast. THE WORD COFFEE's ideal roast is very simple.
To bring out the inherent goodness of the ingredient to its utmost potential.
The Japanese approach to food, with its long history, culture, and traditions, is also applied to roasting high-quality coffee beans. We strive to eliminate as much smoke, unnecessary elements, and waste from roasting as possible, pursuing a roast that brings out all the flavors of the coffee carefully produced by the growers.

We believe that by building upon the culture, techniques, and identity cultivated by Japanese coffee culture, and then reflecting, updating, and refining them in the roasting of high-quality specialty coffee, we can produce even better coffee.
We use a semi-hot air roaster, maximizing its characteristics to control multiple heat transfer methods as intended for each phase, and perform appropriate roasting for each bean. As a result, the roast curve inevitably forms a beautiful curve, expressing the complex coffee unique to semi-hot air roasting.
Based on the above philosophy, THE WORD COFFEE ROASTERS approaches roasting in various ways, meticulously collects data, and constantly verifies and updates its methods.
・About roast level notation
You can check this on the product description page or in the option selection field. At THE WORD COFFEE, we express the roast level in five stages using numbers. Roast level 1 is light roast (acidity dominant), 3 is medium roast (sweetness, acidity, balance), and 5 is dark roast (bitterness dominant). As the number increases, the roast becomes darker, transitioning from fruity acidic coffee to familiar bitter coffee. We believe that the roast level where the individuality of specialty coffee is most felt is between light and medium roast. THE WORD COFFEE offers coffee of all roast levels, but we recommend light to medium roast.
・About aging
It is often said that coffee is best enjoyed from the second day after roasting, but unlike commercially available commodity-grade coffee, specialty-grade coffee can offer changes in aroma and flavor by allowing a certain aging period. This period varies depending on the brand and roast level. THE WORD COFFEE sets the best-before date considering this. Please find your preferred aging period within the given expiration date.

We only ship fresh coffee beans: within 14 days of roasting for light to medium roasts, and within 7 days for medium-dark roasts and darker. (Roast date is indicated on the package.)
・About Best-Before Date
For whole beans, the best-before date is 60 days from the roast date (indicated on the package) for light to medium roasts, and 45 days for medium-dark to dark roasts. While it can still be enjoyed past this period, the aroma and flavor will diminish and gradually be replaced by negative components, so if you cannot consume it within the above period, we recommend freezing it. If you purchase ground coffee, regardless of the roast level, please freeze it if you cannot consume it within approximately one week after opening.
